Blast Chilling is widely used and efficient method of reducing the temperature in cooked and, in some cases, raw food at a very rapid rate. Correctly packed food is stacked onto racks or trolleys designed to fit into the chillers. Powerful fans then circulate the air in the chiller over refrigerated elements and the food within the cabinet. The movement of air reduces the insulating properties of the air on the surface of the food and allows the temperature of the food to be reduced very rapidly. Sensors placed in the food and in the cabinets stop the cooling process as soon as the desired temperature is reached, at which point the chiller becomes a holding cabinet.
